Beetroot

Red, white, golden or candy-cane stripe, this earthy vegetable will brighten up any plate. Beets provide a range of researched health benefits including lowering blood pressure, reducing inflammation and improving athletic performance.

A new study has found that consuming dietary nitrate which is the active molecule in beetroot juice significantly increased muscle force while exercising. Beetroot is also an excellent source of iron and vitamin C.

Rainbow Beetroot Salad

Prep Time: 15 Minutes

Serves: 2

Ingredients
• 1 Chioggia Beetroot thinly sliced
• 1 Golden Beetroot thinly sliced
• 1 Dark red Beetroot thinly sliced
• 1 red apple
• 40g roasted hazelnuts
• 40g soft goat's cheese
• 1 handful of rocket
• 1 handful of microgreens

Dressing
• Juice and zest of 1 lemon
• 1 inch grated ginger
• 1 tsp maple syrup
• Pinch of salt and pepper
• 1 tsp olive oil

Method
• Combine all the ingredients for the dressing together in a mason jar and shake well until combined.
• Arrange the sliced beets and apple on your plate, top with the rest of the ingredients, pour on dressing and serve.
